VRQ Level 1 Certificate Introduction to Culinary Skills | VRQ Level 1 Certificate in Professional Food and Beverage Service Skills

This course is designed to equip you with basic practical skills in customer care, hospitality and catering. You will learn in the College’s kitchen and restaurant where you will be serving members of the public as well as undertaking theory sessions in the classroom.

Is this course right for me?

This one year full-time course is designed to give you an insight into the hospitality industry to allow you to progress to higher level study or into employment.

Hygiene and health and safety requirements:

  • All visible tattoos must be covered
  • All visible piercings must be removed
  • No jewellery allowed, except for a wedding band and one pair of stud earrings
  • Hair must be groomed and tied back
  • Two GCSEs at grade D or above (may include one relevant equivalent) to preferably include English Language/First Language Welsh
  • Good personal presentation and communication skills are required
  • Each application is considered on individual merit
  • Entry is subject to attending a course information session or informal interview
  • Successful completion of relevant programme (including skills) and decision from progression board meeting

The course is designed to give you an insight into the hospitality industry to allow you to progress to higher level study or into employment.

Units to be studied include:

Culinary Skills

  • Food safety in catering
  • Introduction to kitchen equipment
  • Prepare and cook food by boiling, poaching and steaming
  • Prepare and cook food by stewing and braising
  • Prepare and cook food by deep frying and shallow frying
  • Regeneration of pre-prepared food
  • Cold food preparation

Food and Beverage Service Skills

  • Food safety in catering
  • Food and beverage legislation
  • Understanding menus
  • Food and beverage service skills
  • Maintain and deal with payments
  • Hot beverage service

You may need to study an additional skills course depending on:

  • the course you are taking at College
  • what grades you gained in your GCSE Maths and/or English Language

Learners are able to complete either the full qualification or certain units or elements through the medium of Welsh/bilingually. Visit our Welsh Language in the College page to find out what else is available to you.

Successful completion of this course and progression to a higher level programme could lead to a number of future career opportunities including: Junior Sous Chef, Kitchen Porter, Larder Chef, Food and Beverage Assistant, Waiter, Bartender.

Following successful completion of this course learners could look to progress to a higher level course at the College, seek an appropriate Apprenticeship or go directly into employment.
