Sustainable roots at the College
In 2011, Pembrokeshire College students launched ‘Simply Seasonal’ a food cooperative providing a weekly organic fruit and vegetable service to staff and students at the College.
Supported by the Rural Regeneration Unit, the initiative has proved so popular that this year has seen the project expand to provide an even wider choice of produce.
Run and administered by students (under the supervision of the College’s enterprise coordinator) Simply Seasonal sources all produce through Pembrokeshire Produce Direct who are able to offer customers both local and UK grown and produced products.
The food cooperative not only aids local suppliers and provides a unique service to staff but it also allows students to gain valuable experience in organisation, administration and team work. Karen Neville, enterprise coordinator at the College commented: “We are sourcing vegetables from a local supplier and running the scheme internally as a service for staff and students to buy reasonably-priced vegetables on a regular basis which provides custom for local suppliers – and growers; an enterprise experience for our students and a small step towards a healthier lifestyle for people buying the produce.’
It is hoped that the scheme will continue to go from strength-to-strength with even more staff signing up to this brilliant and innovative student-run service.
