Is this course right for me?

This course combines food and beverage service skills with professional cookery techniques, including essential topics like food safety, health & safety, and mastering various cooking methods such as baking, roasting, grilling, boiling, and braising as well as serving food and drinks.

  • Two GCSEs at grade E or above (may include one relevant equivalent) to include English Language/First Language Welsh or Mathematics/Numeracy
  • Good personal presentation and communication skills are required
  • Each application is considered on individual merit
  • Entry is subject to attending a course information session or informal interview
If you have gained your qualifications outside of the UK we will use ECCTIS to check their equivalence to UK qualifications. Please upload proof of your qualifications as part of the application process.
  • Successful completion of relevant programme (including skills) and decision from progression board meeting

Units will include:

Preparing & cooking food by:

  • Deep frying and shallow frying
  • Boiling, poaching and steaming
  • Baking, roasting and grilling
  • Stewing and braising
  • Health & Safety awareness for catering & hospitality
  • Food safety in catering

Introduction to:

  • Personal workplace skills
  • The catering and hospitality industry
  • Healthy eating and special diets
  • Kitchen equipment
  • Regeneration or pre-prepared food
  • Cold food preparation
  • Customer Service
  • Preparing & serving drinks
  • Food service

You may need to study an additional skills course depending on:

  • the course you are taking at College
  • what grades you gained in your GCSE Maths and/or English Language

Learners studying on a Jobs Growth Wales (JGW+) programme will be timetabled into literacy and numeracy sessions. To discuss the opportunity of attending a GCSE resit programme, in addition to their JGW+ timetable, please contact skills@pembrokeshire.ac.uk

  • It would be beneficial, but not essential, to bring your own device/laptop to support your studies
  • Hospitality and Catering Equipment and Uniform - this includes the basics you will need during the course and into the future - £350

  • You will need to pay a £25 hospitality workshop fee each year before you start the Level 1 course
